First saute sliced peppers (I figure about 1 per person) along with a large sliced onion in some extra virgin olive oil with salt and pepper. When the peppers and onions are soft, add a can of diced tomatoes and about a cup of tomato sauce or marinara sauce and let simmer for a couple of minutes for the tomatoes to break down a bit. Lay sausages (I used a plain beef sausage from Sun Prairie Beef, but use whatever appeals to you) in a baking dish like the one pictured above, then pour the pepper mixture over the sausages, top with some cheese (I used Parmigiano Reggiano, but you could also use mozzarella), cover tightly with foil, and bake at 350 until the sausages are cooked, about 30-45 minutes.
I tossed the mixture with some penne pasta to serve, but you can just eat as is or with a side dish of roasted potatoes. Enjoy!
