Tossed Insalata Caprese
Serves 4This classic Italian salad is perfect for picnics and easy to transport in a tossed version. For a pretty presentation, serve Insalata Caprese mounded over Grilled Garlic-Tomato Bread.
1/2 pound mozzarella cheese, fresh
20 cherry tomatoes, halved
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1-2 tablespoons fresh basil leaves, torn or chopped
Salt and pepperCut mozzarella into 1/2 inch cubes and combine with cherry tomatoes in a mixing bowl. Add olive oil, vinegar, and basil and toss to coat. Salt and pepper to taste; let stand a few minutes for flavors to meld, and then serve at room temperature.
