Turkey Breakfast Sausage

Wondering where I’ve been lately? Up to my eyeballs cooking with kids, that’s where! I had a breakfast for lunch class with a group of 7-13 year-olds on Friday, then on Saturday led a cooking class in the garden for the end of summer harvest celebration at Fairmont for the student gardeners and their families, then finished up my Cooking with Michele on Mondays series for kids today with Italian for eleven kids. (I’m still cleaning up the flour from that mess!)
I’ve decided to share several of these “kid” recipes with you. The reality is they are easy enough for kids to make (with some adult supervision) but the flavors are sophisticated enough to please an adult palate as well. First up is my turkey breakfast sausage patties – just a few ingredients, you control how much fat’s in them, and they are killer good.

Turkey Breakfast Sausage
Serves 6-8
Printable Recipe
1 pound ground turkey
1 tablespoon sage, minced
1 tablespoon thyme, minced
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon fennel seeds, crushed and toasted
1/2 teaspoon cracked black pepper
2 tablespoons extra virgin olive oil
Gently mix all ingredients together taking care not to overwork the meat. Form into small patties and chill slightly. Heat olive oil in a large skillet over medium high heat and fry patties a few at a time until nicely browned and cooked through.
