Zucchini and Tomatoes

People often tell me they are bored with vegetables, wishing they were more flavorful and exciting. Well, summer is the time to celebrate the bounty of what’s fresh, and nothing is as simple as this combo – plus kids and adults will both love the flavor!
Start with a red onion, sliced into thin half moons, and a large zucchini (or several small ones) cut into about 1/3 inch thick disks. Saute them in a small amount of extra virgin olive oil just until the onions and zucchini are starting to get soft.

Add a couple of large tomatoes that you have cut into large chunks.
And let them begin to cook down just until they start to soften.
You’ll notice them breaking down like this. Put the lid on and let everything simmer for a minute or two to finish cooking…
…then add a good handful of grated Parmigiano Reggiano cheese to the pan and stir to combine.
You’ll notice that when you serve it the cheese will have melted into the sauce created by the tomatoes. Salt and pepper to taste and sprinkle with more cheese if you like!
