I substituted more cream cheese for the mascarpone and was pleased with the texture and the lower price of ingredients. Next time I will cut out some of the sugar, since the crust is plenty sweet and the caramel sauce takes the sweetness over the top for me. I think I'll try 3/4 cup next time.
