I’ve been busy lately. I know from the lack of posts you might think I’ve been sitting around twiddling my thumbs. Nope, I swear I’ve been busy, and my partners in crime have included peaches, tomatoes, peppers, and canning equipment. Get the picture? I’ll tell you more about that later this week, but for now I wanted to share one of my favorite ways to enjoy those delicious late summer tomatoes before they are gone for the season.This California-style twist on the classic BLT is simply divine, and really hits the spot. No need for a recipe, just toast your favorite bread, slather with as much or as little mayo as you like, then layer crispy bacon, cool lettuce (even though it appears I forgot it in my photo!), juicy tomato slices, and creamy avocado slices. Sprinkle with some salt and pepper, close it up, and dig in!
