Salmon for a Party – plus an olive oil giveaway!

With all of my travels and efforts to help move my parents in November, I totally neglected my olive oil giveaway post. Fortunately, I have the perfect use for this olive oil, and it’s in my full salmon technique that I use when cooking for a large group – perfect for the holidays!I like this technique because you can make a large volume of salmon very easily, even cooking it ahead and refrigerating it to serve on a buffet table for a cocktail party, brunch or dinner. Start by laying the whole filet out on a double layer of foil, then sprinkle it liberally with salt and pepper and cover with minced herbs. I like a mix of parsley, tarragon,and chives, but you can use a single herb or a mixture like this.Then take a lemon and use either a strip zester (removes thin slices of zest) or a knife to zest the lemon. Spread the zest over the top and squeeze the juice over it. Seal up the entire fish in foil – that helps to keep the moisture in – and bake at 400 degrees (or place on a grill over medium high heat) for about 12 minutes, then let rest on the counter for another 10 minutes before opening the foil. Right before serving, drizzle with some high quality extra virgin olive oil like this month’s selection from the folks at Gourmet Cooking & Living.   4. Thank you for this Salmon recipe…can’t wait to try it! My favorite holiday snack is smoked salmon rolled with cream cheese in it, and capers/onions sprinkled on top! Finish with a little dill and a toothpick to keep it together and make it pretty. Would love to be entered into olive oil giveaway :-) . Merry Christmas!

  5. My new favorite holiday snack is croustini with soft feta goat cheese. The recipe is from this site, easy to do, people can and do participate, it tastes great and make the vegetarians happy. I’ll try the salmon soon,as it is my kind of cooking.
