March is National Nutrition Month

March 1, 2011  •  Food for Thought, Vegetables

National Nutrition Month® is a nutrition education and information campaign created annually in March by the American Dietetic Association. The campaign focuses attention on the importance of making informed food choices and developing sound eating and physical activity habits. Sound familiar? It’s right up my alley as it’s what I do every week volunteering as a Chef Educator for Cooking Matters and in local schools. If you want to use this campaign to jumpstart your own healthy eating but need a little motivation, start with some of my favorite vegetable recipes:

Corn and Black Bean Relish
Beet ChipsPancetta Roasted Brussels SproutsRoasted Peppers (this post gives you a bunch of ways to use them)Roasted Asparagus with Balsamic Glaze

Here’s to your health!!!

I love your gorgeous veggie photos and will check out the chef matters. I would love to get involved with something similar. Can’t wait to check out the rest of your blog!
