Godiva Mocha Coffee and Almond Slushy

When I was a kid, my dad would always ask me to make him an iced coffee when he was cutting the lawn. It was the only time I saw him drink cold coffee, and the only time I recall him putting any milk in his coffee. It’s also one of those memories that sticks with me. When summer rolls around and I enjoy my coffee iced instead of hot, I instantly think of my dad.So you can imagine I jumped at the chance to create an iced coffee beverage for Godiva’s new Chocolate Truffle flavored coffee. I mean a refreshing iced coffee beverage and a great memory of my childhood with my dad? I’m in!I’ve been drinking almond milk in my coffee for awhile now, and decided those flavors would work well with the chocolate flavor of the coffee. I also added a tiny bit of almond extra for a bit more pronounced almond taste.This drink is somewhere between an iced coffee and a milk shake. It’s simple to make yet it’s fancy tasting. It’s the kind of drink you’d serve to friends at a summer backyard gathering. Or it’s the kind of drink you make for yourself in the middle of a hot afternoon of gardening just to sit back and take a minute to admire your hard work. That’s what I did today…and man was it good!

Godiva Mocha Coffee and Almond Slushy

Serves: 1
Ingredients
  • 1 cup brewed Godiva Chocolate Truffle coffee
  • 1 cup almond milk
  • ¼ teaspoon almond extract
  • Sweetener of your choice (I used stevia)
Instructions
  1. Combine all ingredients and pour into a shallow container. Freeze, breaking apart withe a fork every 30 minutes, until nearly, but not completely, frozen solid. Break apart and pour into a blender. Pulse the blender to turn the icy mixture to slush, then pour into a glass and enjoy.

    This looks heavenly Michele, of course I haven’t tried anything with the Godiva name on it that wasn’t delicious. Love your addition of almond milk and your memory of you dad. So sweet.

    I really love almond milk because it also imparts some supplements and trace minerals in our body.
