Being a cook, I know how their kitchen probably felt. They were slammed all night from what it sounds like and the expeditor was probably rushing the cooks to push food out and the cooks were juggling cooking the food well/properly and trying to get food out quickly to the customers who had been waiting. I think that diners should remember two things when eating at a busy restaurant #1 don't get annoyed if your food is taking a long time if you want to ensure it is cooked properly #2 mistakes happen and if you are really unhappy they will always cook you another dish/comp your meal

Well shoot! That's a shame about that chicken and is there anything worse than under cooked thighs ... makes me squeamish. I'm with your husband on waiting that long. I'm the "cranky if I have to wait" type also. There may be a good reason for it, but restaurants that don't take reservations are a pet peeve of mine. Especially when I get there and have to wait like that. I've never been to Poteger, and even though the food wasn't memorable that particular night, it wouldn't deter me from going. However, the no-reservations piece would.

I would write to them and set out your dissatisfaction with the meal, presented as useful feedback as opposed to direct criticism. It would be interesting to hear what their reasons are for the drop in standards.

After that, I'd give them a while to rectify the situation and then go back. If the place isn't up to scratch by then, abandonment soon follows!

I will Richard, for sure. It still concerns me how so many people do write off a restaurant after one bad experience and I hope this post makes people think a bit about that!

I would give Potager another chance. I’ve always had great meals at Potager and have never been disappointed. I either go early or late to avoid waiting for a table.
