Late Summer Harvest Tart with Goat Cheese, Onions, Corn and Tomatoes

What’s your strategy when serving both meat eaters and vegetarians at the same meal? For me, I like to ensure that the vegetarian isn’t forced to get by with just the less than center stage side dishes. Sure, if you’re serving big old steaks with roasted potatoes,caramelized onions, and a green salad, there is food that will pass. But where’s the excitement in dining for the vegetarian in that? Where’s the protein for that matter? My trick is to create one standout side dish that could easily be considered an entree on it’s own. The guests eating the meat portion of the meal will enjoy it, but more importantly the vegetarian will leave sated and feel as if you cared.Personally, I don’t know why people don’t make savory tarts for meals more often. They are so easy and versatile – you can literally put just about anything in them. They also usually freeze well and make a great breakfast when you don’t have time to cook.You’ll find my recipe for the simplest (and foolproof) flaky tart crust recipe here. You can always buy a store-bought crust, but they just aren’t as flaky and buttery, trust me! This filling is perfect for this time of year as it uses up that late summer harvest of corn and tomatoes. The eggs and cheese custard filling give it a protein boost, making it a perfect vegetarian entree.

Ingredients
  • 2 large ripe tomatoes
  • 2 tablespoons extra virgin olive oil
  • 1 large onion, thinly sliced
  • Salt and pepper
  • 2 cups corn kernels
  • 4 ounces goat cheese, softened
  • 4 ounces cream cheese, softened
  • 6 large eggs
  • 1 Flaky Tart Crust
Instructions
  1. Slice the tomatoes about ⅓ inch thick and lay on several pieces of paper towels to absorb excess water, changing towels as needed.
  2. Heat oil in a large skillet and cook onions with a pinch of salt and pepper over medium heat until soft and nicely browned, about 20 minutes. Add corn and stir until heated through. Remove from heat and let cool slightly.
  3. Whip cheeses in a mixer until soft and fluffy, then add eggs and mix in one at a time until smooth. Pour vegetable mixture into the egg mixture, then pour into an 11-inch tart pan with a removable bottom that has been lined with the Flaky Tart Crust dough. Bake at 350 degrees until the center is firm and the top is golden brown, about 35-45 minutes. Remove from oven and layer tomato slices on top of the tart before slicing and serving.

    Quiches are always welcome at my house. Often they are vegetarian and the meat isn’t missed at all. i like your addition of the corn a lot.

    I used some goat kefir cheese from the farmers market and the pie came out great!
