Salmon with Soy-Honey-Chili Glaze

If you’re like me and you work from home alone, too often lunch is a bite of this or that – whatever is left from the night before usually. But I’ve been heads down working on my next cookbook and seeing all of the creative recipes from chefs start to roll in, I felt I just needed something a bit tastier for lunch.salmon with honey soy glaze uncookedThis recipe is for 1 serving, but you can do the same thing for even a large crowd if you want. I made a very simple glaze from soy sauce, honey, and a little chili garlic paste. I put the salmon filet with the glaze into a small nonstick skillet and covered it to simmer in the glaze for just a few minutes (it doesn’t take long to cook through a small piece of fish over direct heat on the stove).salmon with honey soy glaze cookingThen I removed the lid and let the sauce evaporate into a glaze for the salmon – this happens VERY quickly and can burn if you’re not watching. If it gets a little too thick, you can thin it down with a bit of water to pour the glaze over the fish.salmon with soy honey chili glaze 2I found some leftover cooked quinoa in the refrigerator and it made a perfect bed for the salmon. Now that’s what I call lunch!

Ingredients
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1-2 teaspoons chili garlic paste
  • 1 5-ounce salmon filet
Instructions
  1. Combine soy sauce, honey and chili garlic paste in a small covered container and shake well to mix (you may need to heat for a few seconds in the microwave to soften the honey).
  2. Spray a nonstick skillet with cooking spray. Add the salmon and pour the glaze over the top. Cover and heat over medium until cooked through, just a few minutes. Uncover and let glaze thicken slightly.
  3. Serve salmon over rice or quinoa with glaze spooned over the top.
