Bronco Orange Butter Cookies

orange butter cookies 4I have had a recipe sitting on my desk since 2008. Yes, it was 6 years ago that I requested a cookie recipe from a woman after having her cookies at a holiday cookie exchange party. I’ve wanted to make them ever since, but just never did. Partly because I was afraid I’d eat the whole batch, and partly because that recipe just kept getting buried under everything else on my desk. Well yesterday, our beloved Denver Broncos faced off against Seattle in the Super Bowl, and I just couldn’t think of anything more appropriate to make for the party we were going to.oranges wholeThe email from the woman who shared the recipe (thanks Anne if you are reading this!) said she had wished they would be more orangey, so I changed her recipe slightly to amp up the orange flavor.orange butter cookies 2The simple glaze hardens up as it dries, making the cookies more transportable. But if you need to carry them somewhere like I did, I’d recommend putting some wax paper between the layers.denver_broncosLittle did I know when I started these cookies and planned this blog post just how badly the game would go for us. But here’s the thing: if you support a team, you need to both celebrate their successes as well as support them when they fail. That’s called loyalty. And for someone new to football, I for one am thankful for the exciting season they gave us, regardless of how it turned out.

Orange Butter Cookies

Ingredients
  • CAKE
  • 1¾ cups flour
  • 1⅔ cups cake flour (or more all-purpose flour)
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1¼ cups sugar
  • 1 cup (2 sticks) cold butter, cubed
  • Zest of 2 large oranges
  • 1 large egg
  • 2 egg yolks
  • ICING
  • 1½ cups powdered sugar
  • 1 large orange, zested and juiced
  • ½ to 1 teaspoon orange extract
Instructions
  1. Whisk the flours together with the baking soda and salt in a medium bowl and set aside. Cream the sugar and butter together in a mixer until smooth, about 5 minutes. Add the egg and mix until incorporated, and then add the egg yolks and mix until smooth, scraping down the sides with a spatula to ensure everything is well mixed. Add the flour, mixing on low until the dough comes together.
  2. Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper or silicone liners. Use your fingers to press the dough flat into a ½-inch high disk. Bake for 15 minutes at 350 degrees, rotating the pans halfway through.
  3. Cook cookies on a rack until completely cool. While cookies are cooling, combine the powdered sugar with the orange zest, juice, and extract and stir until smooth. Use a squeeze bottle or spoon to drizzle over the cookies on the rack and let cook before transferring.
