Potato and Apple Hash with Canadian Bacon
There is something about the first snow falling in Colorado that makes us hunker down a little, crave something that sticks to the ribs just a bit. Sure, with our sunny high altitude skies that snow might be gone within 24 hours, but still, we know that it’s months until spring makes its return. I created this hash recipe for Niman Ranch, and it uses their delicious Canadian Bacon. You can serve it as a side dish for your Thanksgiving table, or as a breakfast hash with a fried egg on top.
