Winter is upon us here in the northern hemisphere. That doesn’t make me very happy as I find myself less and less tolerant of the snow and cold every year. Maybe it’s because I no longer ski, maybe it’s because I find it dangerous to walk my pups when it’s icy outside, or maybe I’m just getting wimpy. I’m not sure, but I am sure about the ability of a beautiful roast to lift one’s spirits. This recipe was originally created for Prairie Grove Farms and you’ll find the complete recipe here. If you don’t have a loin roast, you can cut a pocket into thick pork chops and fill that pocket with the stuffing before roasting. And if you have leftover stuffing, just bake it in an oven safe casserole dish and serve alongside your roast. Stay warm my friends!
