Happy St. Patrick’s Day! I’ve been fortunate that I’ve been able to visit that lovely land called Ireland twice already, and I thought in honor of St. Patrick’s Day I’d share some of my favorite Irish recipes and links.My first trip was in 2010 when I took my parents. My dad had said it was on his “bucket list”, and little did I know that I would lose him just a couple of years later. I’ll forever be grateful that I dropped what I was doing that year and took them. Here they were enjoying an ice cream on one of our few sunny days that trip right after my dad climbed to the top and kissed the Blarney Stone. If you’re thinking of a trip to Ireland, or are just craving some Irish food today, here are some of my favorite links on this site.

Forget the Ring of Kerry, which is long and congested with tourists – instead, be sure to spend a day circling the Dingle Peninsula.Do make time for a visit to the Cliffs of Moher, but when you are done there, spend some time in The Burren. It’s a fascinating area – looks completely barren from a distance, but up close you will find that it’s filled with just about every kind of vegetation imaginable. In fact, the region is famous internationally for it’s vegetation, and you will find Arctic-alpine plants living side by side with Mediterranean plants.Don’t skip Dublin, wherever you do! I love using the hop on and hop off bus in Dublin as it keeps you out of the rain getting from place to place, but the city is not all that large and can also be navigated on foot. Sure, the Guinness tour is a bit overrated and overpriced, but it’s so worth it just for the views from the storehouse and the fabulous t-shirts and other gifts at the end.
