Rustic Argentine Beef Hand Pies

I had the pleasure of developing some recipes for Niman Ranch this summer to feature their ground meats. If you don’t know about them, their tagline says it all, for me: All-Natural Meats Raised by Small Family Farmers Committed to Sustainable & Humane Practice. In fact, you can read about their farmers here or check out things like their recent Farmers’ Appreciation Dinner on Facebook.After a bit of brainstorming with the staff at Niman Ranch, we came up with a list of six recipes to feature their ground lamb, pork, and beef, starting with these easy to make, fun rustic hand pies. You can make the dough like I did – it’s not really hard – or purchase pre-made empanada wrappers. And you can make the pies large like these for meal sized servings, or small to serve as appetizers. I like them drizzled with some romesco sauce, but you can also serve with chimmichurri sauce. You’ll find the recipe over at the Niman Ranch site – enjoy!
