Sweet Potato and Cauliflower Mash

I was recently at a friend’s for a dinner where all of the guests made food to celebrate our annual bidding at the Gold Trophy Bison Sale at the stock show. The host had made a vegetable mash as a side dish and he started rattling off things that were in it, mostly root vegetables of one sort or another, and honestly he didn’t even fully recall what he had put together – but it tasted great. So when face with come cauliflower from a bag of veggies a friend had brought to me with a salad and a nearly-ready-to-rot sweet potato, I figured, why not combine the two? This is about as easy as it gets for making a tasty side dish – add everything to taste and serve alongside a nice roast chicken like I did, the ultimate comfort food dinner.

Sweet Potato and Cauliflower Mash

Ingredients
  • 1 sweet potato, peeled and cubed
  • 1 cup cauliflower florets
  • Half-and-half, to taste
  • Butter, to taste
  • Salt and pepper, to taste
  • 2 teaspoons minced fresh thyme, optional
Instructions
  1. Combine the potato and cauliflower in a small saucepan and cover with cold water. Bring to a boil, reduce to simmer, and cook until fork tender. Drain and return the vegetables to the hot pan. Add a bit of half-and-half, butter, salt and pepper and mash together, adjusting the ingredients to your own taste. Stir in thyme at the end if using.
