Grilled Avocado and Cheese Sandwich

Do you get those cravings ever that you just can’t stop thinking about unless you get yourself into the kitchen and cook? Well, I’ve been thinking about this sandwich ever since I made that Creamy Tomato Soup six weeks ago. And the more I thought about it, the more I could see the scene from Chef where he is making the perfect grilled cheese after work. I could hear the sizzle, smell the butter, and finally, I couldn’t take it anymore. I made this – and it is soooooo good!Lots of little things add up to make this more than a simple grilled cheese. First, I used a hearty sprouted grain bread – Food for Life makes one I like. I buttered that on both sides and sprinkled grated Parmigiano Reggiano cheese on each half. Set the first slice buttered side down on a hot griddle and place about 1/4 cup grated cheese on top (I used the 5-blend type).Next spread sliced avocado on top of the cheese (about 1/3 to 1/2 avocado per sandwich) and put another 1/4 cup of cheese over the avocado.When the first piece of bread seems nicely browned and the cheese has started to melt, put the second piece of bread on top, buttered side up, and turn with a spatula to cook on the second side. Be careful turning the sandwich so you don’t lose the fillings! As the second side browns, and the cheese gets melty, you can press down gently on the sandwich with the spatula to help the ingredients stick together. Remove from the heat and slice and serve. You’re day will be complete, I promise you!
