Cucina Povera Pasta

Around the world, communities of people have learned to make delicious food even in hard times, even when ingredients are scarce. I’m grateful every day that I don’t suffer from food insecurity, and it’s colored how I think of scraps or leftovers. This pasta dish is a classic example of something that came together out of things others might toss. Did I mention it’s quite delicious too?

At the end of a bag of garlic croutons are usually a bunch of crumbs – you might just toss them with the bag, but they are quite delicious tossed with some al dente pasta. I also had some chopped herbs left from a recipe this week – chives and parsley – and just a sprinkling of grated Parmigiano Reggiano cheese. I tossed everything together with some nice extra virgin olive oil (check out sources on the sidebar to the right) and a little salt and pepper. Flavorful, satisfying, cheap. And zero food waste!
