Boursin Sweet Potatoes

I’ve been on a restricted diet now for 2 weeks – not to lose weight, but to recover from gum surgery. I’ve been telling everyone I’m on a liquid diet – it garners more sympathy – but in fact I’m on a “nothing that needs to be chewed” diet. The two toughest things for me are not eating meat – I refuse to eat it pureed except for the exception I made in the soup recipe that’s coming soon – and giving up potato chips. So I decided to try some potato alternatives to my beloved Cape Cod Reduced Fat chips, and came up with this recipe. Simple. Delicious. Almost makes me not miss my chips!
- 3 large sweet potatoes
- 1½ packages of Boursin cheese (herb or onion)
- Salt and pepper
- Peel the sweet potatoes and boil until very soft; drain. Add Boursin to the potatoes and mash until well combined. Season with salt and pepper to taste.
