Boursin Sweet Potatoes

I’ve been on a restricted diet now for 2 weeks – not to lose weight, but to recover from gum surgery. I’ve been telling everyone I’m on a liquid diet – it garners more sympathy – but in fact I’m on a “nothing that needs to be chewed” diet. The two toughest things for me are not eating meat – I refuse to eat it pureed except for the exception I made in the soup recipe that’s coming soon – and giving up potato chips. So I decided to try some potato alternatives to my beloved Cape Cod Reduced Fat chips, and came up with this recipe. Simple. Delicious. Almost makes me not miss my chips!

Boursin Sweet Potatoes

Ingredients
  • 3 large sweet potatoes
  • 1½ packages of Boursin cheese (herb or onion)
  • Salt and pepper
Instructions
  1. Peel the sweet potatoes and boil until very soft; drain. Add Boursin to the potatoes and mash until well combined. Season with salt and pepper to taste.
Notes
There is a ratio for this recipe: ½ package of Boursin for every good sized sweet potato. So make as much or as little as you need for your meal and adjust accordingly!
