Do you get bored with the same old protein and two sides? Who doesn’t, right? With just 3 simple ingredients thrown in at the end, you can turn your rice from bland to sexy. And because of the red and green colors in this recipe, why not tuck this away for a simple side dish for your Christmas table?
- 1 cup white rice, cooked
- ½ cup dried cherries or cranberries
- ½ cup pumpkin seeds, toasted lightly
- 4 ounces crumbled feta cheese
- Salt and pepper
- Toss the warm cooked rice with the cherries, pumpkin sees and feta. Season to taste with salt and pepper and serve hot.
