BBQ Pork Rib Fried Rice

One of the things I’ve been adamant about is supporting local restaurants during the closures this spring and summer as a result of the COVID threat. In that process I found a guy making fabulous smoked pork ribs (@mikeysmeats5280 on Instagram). Faced with some leftover rib meat, I made this super simple pork fried rice. Maybe you made ribs for the 4th of July? If so, this dinner will be ready in 5 minutes and you won’t be disappointed!

Ingredients
  • 1 tablespoon canola oil
  • 2 large eggs, lightly beaten
  • 4 ounces shredded pork rib meat, fat and gristle discarded
  • 2 cups leftover cooked rice
  • ½ cup frozen peas
  • 2 scallions, thinly sliced
  • Soy sauce, for serving.
Instructions
  1. Heat the oil in a skillet or wok and quickly cook the eggs - transfer to a plate. Add the pork meat and stir until heated through. Add the rice and peas and cook until warmed. Remove from the heat, stir in the cooked egg and scallions, and serve with soy sauce.
