Pesto Goat Cheese

We had an engagement party recently for my son and his fiancé – they’ve been dating about 5 years, and we couldn’t be happier about the upcoming wedding!Here’s their story – one of the bridesmaids had this put together and it was a huge hit. Every time a guest asked my son a question, he could simply say, “Have you seen the board?”One of the other bridesmaids brought this fun contribution to the party – everyone wrote a tip for a successful relationship on a card and all the keys went into a tip jar for the kids to read later.My contribution (other than giving birth and raising that boy!) to the event was, of course, the food. For an open house I like finger foods, and cheese is always popular. But to make it a bit more summery, I stirred in some homemade basil pesto into goat cheese – and boy, was that a hit. You can make this ahead of time and then let it come to room temperature so that it’s soft to spread. Serve it with crackers and some nice crostini, on a platter with some Italian meats, and you have a party in minutes.
- ½ cup basil pesto
- 1 pound softened goat cheese
- Salt to taste
- Stir the pesto into the softened goat cheese until it's well mixed. Season with salt to taste, and then refrigerate. Bring to room temperature before serving.
