Late Summer Harvest Tart with Goat Cheese, Onions, Corn and Tomatoes

Ingredients
  • 2 large ripe tomatoes
  • 2 tablespoons extra virgin olive oil
  • 1 large onion, thinly sliced
  • Salt and pepper
  • 2 cups corn kernels
  • 4 ounces goat cheese, softened
  • 4 ounces cream cheese, softened
  • 6 large eggs
  • 1 Flaky Tart Crust
Instructions
  1. Slice the tomatoes about ⅓ inch thick and lay on several pieces of paper towels to absorb excess water, changing towels as needed.
  2. Heat oil in a large skillet and cook onions with a pinch of salt and pepper over medium heat until soft and nicely browned, about 20 minutes. Add corn and stir until heated through. Remove from heat and let cool slightly.
  3. Whip cheeses in a mixer until soft and fluffy, then add eggs and mix in one at a time until smooth. Pour vegetable mixture into the egg mixture, then pour into an 11-inch tart pan with a removable bottom that has been lined with the Flaky Tart Crust dough. Bake at 350 degrees until the center is firm and the top is golden brown, about 35-45 minutes. Remove from oven and layer tomato slices on top of the tart before slicing and serving.
