Raspberry Ice Cream

Ingredients
  • 2 cups milk
  • ½ cup heavy cream, optional but does make it creamier!
  • 4-6 egg yolks
  • ½ cup sugar
  • 2 cups raspberry puree (seeded if desired, but not necessary)
Instructions
  1. Combine milk, cream, egg yolks and sugar in the top of a double boiler and whisk together. Continue stirring over the heat from the double boiler until the mixture thickens slightly. remove from heat and stir in raspberry puree. Refrigerate until cold, then freeze in an ice cream maker according to manufacturer's directions. Let thaw slightly before serving.
