1 pound boneless chicken thighs or breasts, sliced thinly
1 small onion, diced small
2-3 cups tomato juice
2-3 tablespoons sweet or smoked paprika
½ cup nonfat Greek yogurt
Instructions
Heat the oil in a large skillet over medium high heat; add chicken and cook, stirring occasionally, until browned on the outside. Add onions and continue to stir and cook until onions have softened slightly, about 5 minutes. Add tomato juice and paprika, bring to a boil, reduce to a simmer, and cook, uncovered, until tomato juice reduces and thickens, about 20 minutes. Turn heat off, stir in yogurt, and serve over rice or pasta.
