Lemon and Blueberry Frozen Greek Yogurt

Ingredients
  • ½ cup sugar
  • ½ cup freshly squeezed lemon juice
  • 3 cups nonfat Greek yogurt (or use 1% or 2% if desired)
  • Stevia, if desired
  • 2 cups blueberries (fresh or frozen)
Instructions
  1. Heat the sugar and lemon juice in a small saucepan just until the sugar melts. Refrigerate or chill over an ice bath, then combine with the yogurt, stirring well. Taste mixture and if you desire it slightly sweeter, add some Stevia until it's sweet enough for your taste. Freeze in an ice cream machine according to manufacturer's direction until the consistency of soft serve ice cream. Remove ice cream from the machine and stir in blueberries. Best served immediately, but may be frozen fully in the freezer and softened a bit at room temperature to serve later.
