Quinoa Oatmeal Raisin Cookies

Ingredients
  • 1½ cups flour
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup (1 stick) butter (Eliza calls for unsalted which I didn't have on hand)
  • ¼ cup sugar
  • ¼ cup brown sugar
  • ¼ cup honey
  • 2 large eggs
  • 1 teaspoon vanilla
  • ½ teaspoon almond extract
  • 1 cup cooked quinoa, cooled (that's about ½ - ⅔ cup dry)
  • 1 cup old-fashioned oats
  • 1 cup raisins (or use dried cranberries like I did)
Instructions
  1. Preheat oven to 375 degrees and line a baking sheet with parchment paper (I use silicone mats which work well too).
  2. In a medium bowl, whisk together the flour, salt, baking powder and baking soda. In a large mixing bowl, beat together the butter, sugar, brown sugar, and honey with an electric mixer until light and fluffy, about 3 minutes. Add the eggs, vanilla and almond extract and beat another 2 minutes. Add the flour mixture and mix just until combined. Stir in quinoa, oats, and raisins and mix until combined, using your hands if necessary.
  3. Scoop heaping tablespoons of the dough and roll into balls; arrange on the baking sheet, space 1½ inches apart.
  4. Bake until cookers are lightly browned, about 12 to 15 minutes. Remove from oven and cool for 5 minutes before removing cookies from the pan and cooling fully on a wire rack.
