Stracciatella d'Europa Ice Cream

Serves: 4-6
  • 1½ cups lowfat buttermilk
  • ⅔ cup sugar
  • 4 egg yolks
  • 1½ cups heavy cream
  • 1 tablespoon orange extract (or vanilla extract)
  • 4 ounces finely chopped dark chocolate
  1. Combine the buttermilk with the sugar and eggs in the top of a double boiler and whisk together. Cook, stirring continuously, until the mixture thickens, about 5 to 10 minutes.
  2. Remove from the heat and pour into a covered container. Stir in the cream and the extract and refrigerate until completely cool.
  3. Process in an ice cream machine according to manufacturer's directions, and then spoon into a covered container. Gently stir in the chocolate, then cover and refrigerate until solid.
