Bacon-Onion Jam

Ingredients
  • 1 pound bacon or pancetta, diced
  • 1 large white onion, thinly sliced
  • 1 large red onion, thinly sliced
  • 1 teaspoon Dijon mustard
  • ¼ cup maple syrup
  • ¼ cup Balsamic vinegar
  • ½ teaspoon pepper
Instructions
  1. Cook the bacon in a large saucepan sauté pan until partially crisp, but not totally crisp, Drain off all but 2-3 tablespoons of bacon fat. Add the onions and cook over medium until they are nicely caramelized. Add the remaining ingredients and bring to a simmer; cook over medium low until everything is nicely glazed, about 45 minutes.
  2. Transfer to a food processor and pulse until the mixture has the consistency of a thick jam (not entirely smooth). Store in a covered container in the refrigerator for up to a week. Serve on burgers on on crackers with cheese.
