Smoked Sausage and Peppers in a Creamy Mustard Sauce

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 3 bell peppers (variety), diced
  • 1 small onion, diced
  • 4 links Prairie Grove Farms Smoked Sausages, sliced (or other cooked pork sausages)
  • 12 cherry tomatoes
  • 1 cup half and half or cream
  • ¼ cup coarse grain mustard
  • 8 ounces farfalle or other short pasta, cooked and drained
Instructions
  1. Heat the oil in a large skillet and add the peppers and onions; cook until slightly soft, about 5 minutes. Add the sausage and cook until lightly browned, about 3 minutes. Add the cherry tomatoes, half and half, and mustard, and stir gently. Bring to a simmer and let cook until slightly thickened and tomatoes wilt a bit, about 5 minutes. Add the cooked pasta to the pan and stir together over medium heat for about a minutes. Serve immediately.
