Combine the potato and cauliflower in a small saucepan and cover with cold water. Bring to a boil, reduce to simmer, and cook until fork tender. Drain and return the vegetables to the hot pan. Add a bit of half-and-half, butter, salt and pepper and mash together, adjusting the ingredients to your own taste. Stir in thyme at the end if using.
