Serves: 1½ cups
Ingredients
  • 12 ounces mayonnaise
  • 1 lime, juiced
  • 1 tablespoon chipotle puree (see notes)
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
Instructions
  1. Combine all ingredients in a blender and blend until smooth. Refrigerate until ready to use.
Notes
To make chipotle paste, puree a can of chipotle peppers in adobo sauce in the blender with just enough water to make the mixture come together into a thick paste like ketchup. Spoon into a fine mesh strainer and press the puree threw the strainer into a bowl; discard seeds and other solids. Freeze puree in ice cube trays until needed.
