Traditional Brown Irish Soda Bread

Adapted from the Ballyvaughan Farmers' Market Cookbook

Serves: 16-20
Ingredients
  • 12 ounces whole wheat flour (2 cups)
  • 4 ounces all purpose flour (2/3 cup)
  • 2 ounces pinhead oats (also called Irish or steel cut) (1/3 cup)
  • 2 ounces wheat bran (1 cup)
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 2 eggs, beaten
  • 3 cups buttermilk
Instructions
  1. Combine dry ingredients in a large bowl and mix well. Combine egg and buttermilk, then pour into bowl and mix to form a soft dough similar in texture to zucchini bread batter. Pour dough into a greased loaf pan and bake at 375 degrees for about 50 minutes. Cool on a wire rack before slicing. Serve with plenty of rich Irish butter!
