Quick Dirty Rice
Recipe type: Side Dish
Serves: 2-4
- 1 cup cooked brown rice
- ¾ cup cooked black beans
- 1 tablespoon extra virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- ground cayenne pepper, optional
- salt and pepper, to taste
- Reheat cooked rice and beans, then toss with olive oil and spices. Season with salt and pepper to taste and serve.
