Beating the Heat – Creamsicle Ice Cream

As I type this, I’m bracing myself for a week of 100 degree weather. I know they say in Colorado that “it’s a dry heat”, but as a comedian once said, “So’s my oven…but I wouldn’t stick my head in there!” And from a quick glimpse at the weather map I can see that we aren’t alone here – temperatures are soaring through much of the US and Europe this summer, and we all need a way to beat the heat.
Remember when you were a kid and the ice cream truck would come rolling through your neighborhood? It had that certain jingle that your ears could pick up miles away, as you raced inside to gather your pennies, nickels, and dimes. The Creamsicle was brought to us by the Popsicle company, which originated from an 11 year old boy accidentally freezing flavored soda water in a cup with a stick in it. The Creamsicle comes in several flavors, but to me the orange is iconic. It’s filled with creamy vanilla ice cream in the center, surrounded by a coating of orange popsicle.This ice cream is those flavors rolled into a silky, creamy, rich dessert. And it’s just what you’re going to need to beat the heat this week!
- ½ cup sugar
- 4 egg yolks
- 2 cups half and half
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 2 cups orange juice
- Zest of 2 oranges
- Combine sugar, egg yolks and half and half in the top of a double boiler. Whisk together then cook, stirring constantly, until thickened, about 10 minutes. Remove from heat and add remaining ingredients. Refrigerate until cold, then process in an ice cream machine according to manufacturer's directions.

The ice cream truck still comes through my neighborhood occasionally and I get those moments of wanting to find nickels and dimes but the truth it would be dollar bills today!
This is my all time favorite yet have never thought of making my own. Now that I’ve pulled out the ice cream maker for sorbets I want some homemade ice cream in my fridge. It is hot here. This would be perfect.

Barb, you’ll laugh at this: I had kids here yesterday for a sushi cooking class. After class I offered them some of this creamsicle ice cream and one of the 7 year olds took one bite and said “This is disgusting!” I can assure you it’s not (it’s delicious), but I was put in my place and had a good chuckle!

I just made some lemon ice cream and as soon as it’s gone this is next in the lineup. Love your story about the 7 year old. Too funny.
