Bison Meatballs and Vegetables with Marinara Sauce

bison meatballs with veggies and marinara 1When I started my quest to lose weight by following a carb cycle diet, I was kind of at a loss for what to eat. It’s hard enough to figure out a good dinner each night, but faced with creating 5 meals a day that fit the high carb or low carb model seemed almost overwhelming. But I’m happy to report that after just 10 days, I’ve got it down and have created some really tasty dishes that work – like this one.bison meatballs with veggies and marinaraFor those of you who may be skeptical about this approach to healthy eating, let me just tell you I have not been hungry since I started following the diet, and I managed to enjoy a wedding and the fabulous dinner we had at Chefs Up Front (post coming soon!) all within the guidelines of the plan. Part of the key to feeling full is to get enough vegetables into your diet as well, so especially on low carb days I try to get them into most meals. Here’s a tip: I made a very large batch of small (1/2 ounce each) bison meatballs and I keep them in a bag in the freezer. When I need some protein for a meal they are easy to quickly defrost and use. This dish is simple, nutritious, and just over 250 calories which is what I shoot for in each of my 5 meals a day on the carb cycling diet. If you’re trying this along with me, I hope you like it!

Bison Meatballs and Vegetables with Marinara Sauce

Ingredients
  • 3 ounces cooked bison or lean ground beef
  • ½ cup broccoli florets
  • ½ cup diced onion
  • ½ yellow pepper, diced
  • 8 ounces marinara sauce
  • 2 tablespoons grated Parmigiano Reggiano cheese
Instructions
  1. Combine all ingredients except the cheese in a small saucepan and simmer over medium low heat until the meat is heated through and the vegetables have softened. If the mixture is drying out, add a little water as it simmers. Remove from heat, stir in cheese, and enjoy.

    Such a lovely low carb dish. I have lost about 80 lbs low carbing it. It really does work. I just made some protien bars with flax, almonds, coconut, whey powder and chocolate. They turned out delish.

      Good for you Connie! I have found the carb cycling works better for me than just the strict low carb diet – helps keep my metabolism cranking!

        I am just starting the Chris Powell Carb Cycling Plan. His book is like hiring a personal trainer for $9.99! However, I found the recipes he supplies pretty limited. So happy to find your recipes, Michele. You stick to the plan and still find appealing, appetizing dishes I want to try. I’m feeling hopeful. Wish me luck 🙂
