Pork Chops with Apples and Onions

Every once in awhile I make something for dinner that is one of my all time favorites, and then am quite surprised to find that I’ve not shared that recipe with my readers. This is one of those times. Pork and apples just go great together and are such a fall/winter classic. My recipe is simple and you can have dinner on the table in 30 minutes.

Pork Chops with Apples and Onions
Serves 4

extra virgin olive oil
salt and pepper
4 pork chops (I prefer bone in because they have better flavor)
2 onions, sliced thinly
4 small apples, cored and cut into 1/2 inch slices (no need to peel unless you must!)

Heat 1-2 tablespoons of oil in a large skillet (do NOT use a nonstick skillet – you want to get that nice browning and caramelization) over medium high heat. Season chops generously with salt and pepper, then add to pan. Cook until golden brown, then turn over, cooking about 4 minutes per side. Do NOT overcook the pork chops or they will get tough. Remove pork to a plate and cover with foil to rest. Add onions to skillet and cook until they begin to soften, stirring to pick up brown bits from the pan. Add apples and continue to cook until apples and onions are heated through and soft, about 5 minutes, adding back any pork juices that have collected and a bit of water if they begin to dry out. Serve pork chops with apples and onions spooned over the top.
