Tossed Tomato Caprese Salad

I’ve given you a Caprese style appetizer and a Caprese style pasta dish – so all that’s left is the traditional Caprese salad. To make serving it a little easier for your summer gathering (be it the 4th of July in the US or any other celebration around the globe!), try serving this tossed version.

Tossed Insalata Caprese
Serves 4

This classic Italian salad is perfect for picnics and easy to transport in a tossed version. For a pretty presentation, serve Insalata Caprese mounded over Grilled Garlic-Tomato Bread.

1/2 pound mozzarella cheese, fresh
20 cherry tomatoes, halved
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1-2 tablespoons fresh basil leaves, torn or chopped
Salt and pepper

Cut mozzarella into 1/2 inch cubes and combine with cherry tomatoes in a mixing bowl. Add olive oil, vinegar, and basil and toss to coat. Salt and pepper to taste; let stand a few minutes for flavors to meld, and then serve at room temperature.
