Help! I’m drowning in green tomatoes!

October 2, 2009  •  Vegetables

Help! We got our first frost in Denver last night and although my basil survived (weird – I think because it’s so close to the western warm stucco side of the house), my tomato plants did not. My son helped me dig them all out today and I harvested every green tomato that wasn’t half rotting or split.
Now I’m sitting with THIRTY POUNDS of green tomatoes in the kitchen. I don’t think I need to make any more green tomato relish, and although I’ll puree some of it to freeze for green tomato bread this winter, I know that’s only going to use up about 1/4 of these lovelies. So…send me your ideas and recipes! If I make it and blog about it, I’ll feature you as the source. I’ve already found a lovely lentil and green tomato Indian dish that looks interesting, a green tomato chicken chili that looks easy, and a green tomato and green pea curry that I can just see served over jasmine rice. What do you think I should make?

Anonymous – wish I had had time to make that, but my green tomatoes turned red before I got around to it! Here's the link to the recipe on the blog I found it:
