Pork and Pear Salad

I live alone, and as anyone who cooks for one will tell you, it’s often easier and more enjoyable to cook something in a larger portion, then use the leftovers over the coming days instead of cooking every meal from scratch for yourself every day. So although I’m a household of one, I still cook large roasts, knowing I can use the meat in salads, soups, stir fry dishes, or pasta sauces over the next few days.Last week I posted the technique for cooking pork hocks in an Instant Pot – that yielded about 6 servings of deliciously tender pork, perfect for a winter salad like this. Pork and pears go well together, and both are enhanced with a balsamic glaze or vinaigrette. There isn’t really a recipe for this dish – I simply topped mixed greens with sliced pears, chopped red peppers, and some chopped pork, and drizzled the entire dish with balsamic and olive oil. Grab a piece of crusty bread to complete your meal and you’re set!
