My daughter Jenny was home from school this weekend long enough to do her laundry and take a nap on the couch. Before she left she shared with me one of her new favorite college recipes to make, compliments of Mrs. Decker of Ohio.Hot Dog Casserole
Serves 44 cups cooked mashed potatoes (they used the box instant variety)
1 red pepper, diced
1/2 yellow onion, diced
3/4 jar marinara sauce
6 hot dogsSaute peppers and onions in large skillet until soft. Combine marinara and vegetables in a medium saucepan and let simmer. Meanwhile, slice hot dogs diagonally in half inch pieces [editor’s note: don’t you love the food artistry since they slice them diagonally?!] and cook in skillet until lightly browned. Add to sauce and stir together.
To serve, ladle sauce and hot dogs over a generous scoop of mashed potatoes. Enjoy!
