Start by laying the whole filet out on a double layer of foil, then sprinkle it liberally with salt and pepper and cover with minced herbs. I like a mix of parsley, tarragon,and chives, but you can use a single herb or a mixture like this.Then take a lemon and use either a strip zester (removes thin slices of zest) or a knife to zest the lemon. Spread the zest over the top and squeeze the juice over it. Seal up the entire fish in foil – that helps to keep the moisture in – and bake at 400 degrees (or place on a grill over medium high heat) for about 12 minutes, then let rest on the counter for another 10 minutes before opening the foil. Right before serving, drizzle with some high quality extra virgin olive oil
