Artichoke Tea Sandwiches – and a Wusthof Bread Knife Giveaway!

Have you wondered where I’ve been for the past week or two? Well, December is the busiest time of year for my catering business and I’ve had 5 major events in just 10 days – two cooking dinner parties, two large cocktail parties (one for 50 and one for 90), and a plated dinner party for 22. Yes, my back and feet hurt. Yes, my new knee is fatigued. But the good news is I have some yummy recipes to share this week that just might make their way into your holiday entertaining plans.The dinner party I did was for 22 women who have held a themed cookie exchange for the past 30 years, if you can believe it. This year the theme was the Queen’s Jubilee, so they requested tea sandwiches for the passed appetizers. These are simple to make, even in a large portion like I did for the party, but you need a great bread knife to make a clean cut when removing the crusts. Wüsthof was kind enough to send me their Classic Double Serrated Bread Knife to try out – and I love this knife. It’s the cleanest cutting bread knife I’ve ever owned, and there is one on the way to one of you lucky readers too, just check out the details below!I made two varieties of tea sandwiches: one with a lemon dill cream cheese spread (recipe coming soon) and cucumbers, and one with this cheesy artichoke spread. If you have any filling left over you can heat it up and eat like an artichoke dip with veggies and crackers.
- 24 slices whole wheat bread
- 2 cans artichoke hearts, drained
- 8 ounces cream cheese, at room temperature
- ½ cup mayonnaise
- ½ cup grated parmesan cheese
- ½ teaspoon pepper
- salt, to taste
- Combine all ingredients in the bowl of a food processor and process until smooth. Divide evenly between 12 slices of bread and spread until smooth. Top with remaining slices of bread, cut off crusts, and cut each into 4 tea sandwiches.

Bread. Where to start? We’ve been on a Paleo Diet for a while and I do miss ANYTHING toasted and slathered w/ salted high fat butter. I think every bread secretly wants to be toasted:0)

Oh my gosh! What a treat the guests got to enjoy! My favorite bread is a “real”, a.k.a. northern, hard roll, or a croissant. I can’t decide!! Tee hee! But both with butter – you can’t go wrong!

Im what people call a “fat kid” LOL because i love food, especially breads. Im not sure what type of bread it is, but the dark brown bread from cheesecake factory is my favorite. I also love french, ciabatta, focaccia. To many to name.

My favorite bread is focaccia bread topped with olive oil, sea salt and tomatoes that dry in the oven and become chewy. Dip that in the warm olive oil. Forget the main course – just give me that bread!
