I’ll tell you, as I’ve said many times on this blog, sometimes life just gets in the way of life. Between cooking classes, volunteering, starting work on my new cookbook, and planning for a family reunion (everyone arrives today!), I’ve hardly had time to cook. The good news is you will find LOTS of ice cream recipes on my site (in fact you’ll find 24 varieties), as I have a small love affair going on with my ice cream maker. But I’m also trying desperately to try to watch what I eat, and I don’t know about you, but I can plow through ice cream at a terrifying pace, and consume much more than the 1/2 cup serving size listed on most containers or in most recipes.lemons squeezedSo while staring at a bag of lemons that I knew I needed to juice before they went bad, I had the idea of making a lemon blueberry frozen yogurt using nonfat Greek yogurt.greek yogurt fageI’ve been eating this stuff for breakfast, mixed with some fruit and a little stevia if the fruit isn’t sweet enough, so I figured I try it out for a frozen treat.lemon and blueberry frozen greek yogurt 1The recipe is easy and the blueberries and lemon just go wonderfully together. Because there is only a moderate amount of sugar and no fat, the mixture freezes very hard. So this would either be best served as a soft serve ice cream coming right out of the ice cream maker, or you’ll need to let it soften on the counter for a bit if it’s being eaten from the freezer. Lemon and Blueberry Frozen Greek Yogurt

Ingredients
  • ½ cup sugar
  • ½ cup freshly squeezed lemon juice
  • 3 cups nonfat Greek yogurt (or use 1% or 2% if desired)
  • Stevia, if desired
  • 2 cups blueberries (fresh or frozen)
Instructions
  1. Heat the sugar and lemon juice in a small saucepan just until the sugar melts. Refrigerate or chill over an ice bath, then combine with the yogurt, stirring well. Taste mixture and if you desire it slightly sweeter, add some Stevia until it's sweet enough for your taste. Freeze in an ice cream machine according to manufacturer's direction until the consistency of soft serve ice cream. Remove ice cream from the machine and stir in blueberries. Best served immediately, but may be frozen fully in the freezer and softened a bit at room temperature to serve later.
