Easy Cheesy Quick Queso Dip

I know I’m not the only one who finds themself 10 minutes before you’re supposed to depart for a party, realizing that you don’t have an appetizer to bring, wondering what you can do quickly that might be better than just bringing a box of crackers. A quick glance in my pantry and fridge led to this queso dip. It takes 5 minutes to make, it’s delicious, and the best part is you can have these ingredients on hand for a quick dish. I’m freezing the leftovers to see what happens. Enjoy!

Easy Cheesy Quick Queso Dip

Ingredients
  • 8 ounces shredded sharp cheddar cheese
  • 16 ounces green chile sauce (I used 505 brand my son left here)
  • 4 ounces creme fraiche
Instructions
  1. Combine the cheese and chile sauce in a small pan and heat over medium until the cheese starts to melt. Add the creme fraiche and stir until well combined and the cheese is completely melted. Serve with veggies and tortilla chips. As dip cools, microwave for a few seconds to reheat and stir.
Notes
Don't think about using sour cream instead of the creme fraiche in this recipe as sour cream "breaks" when heated. The higher fat content of creme fraiche is what makes it work here. If you don't have creme fraiche you can use 4 ounces of cream cheese.
