Apple Galette for Two

The new man in my life has a sweet tooth. I try not to indulge that, but honestly, it feels pretty nice to bake something for someone special. I make apple tarts all the time for holiday dinners, but figured he couldn’t get into too much trouble with a single/double serving made into a galette. Use your favorite crust recipe (I think my flaky pastry crust is divine) and fill it with some sweetened apples and cinnamon and you have dessert in 45 minutes. He loved it, and I think you will too!

Ingredients
  • 1½ or 2 apples (I like Honeycrisp), peeled and cut into small chunks
  • ¼ cup sugar
  • 2-3 teaspoons cornstarch
  • 1-2 teaspoons ground cinnamon
  • 9-inch round rolled piece of pastry dough
  • 1 egg, beaten
Instructions
  1. Combine the chopped apples with the sugar, cornstarch and cinnamon and toss well until evenly coated. Lay the dough on a silicone baking mat or parchment paper on a baking pan. Mound apples in the center, leaving 1-2 inches of dough to the edges free of apples. Fold up the dough, pinching together as you move around the circle, to hold the apples in place. Brush the dough with the egg wash. If desired, sprinkle some extra sugar on top before baking for 45-50 minutes at 375 degrees. Let cool just slightly before slicing and serving. Leftovers are excellent with coffee the next morning, I've been told!
