Crispy Sesame Beef with Broccoli

There’s something irresistible about the crispy chewy texture of the meat in this classic Asian dish which can be made with either chicken or with beef. In my case, I had some leftover steak that was quite rare, so it was perfect to use up in this dish. If you’re using chicken, you’ll need to deep fry the pieces just a little longer to ensure the chicken is cooked through.

Ingredients
  • 8 ounces steak, cut into small cubes (see Notes)
  • 1 egg white, beaten
  • 1 teaspoon crushed garlic (1 small clove)
  • 1 teaspoon grated ginger (easier to grate if you keep your peeled fresh ginger in the freezer)
  • 3 tablespoons soy sauce, divided
  • 2 tablespoons honey
  • 2 tablespoons ketchup
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon cornstarch
  • ¼ cup flour
  • ¼ cup cornstarch
  • ½ teaspoon baking powder
  • Canola or grapeseed oil, for deep frying
  • 1 head broccoli, cut into florets and steamed for 3-4 minutes
  • Sesame seeds, for garnish
Instructions
  1. Combine the steak cubes with the egg white, garlic, ginger, and 1 tablespoon soy sauce in a small bowl. Stir to mix coat the meat and refrigerate for one hour or up to four hours.
  2. In a small covered container, combine the remaining 2 tablespoons soy sauce with the honey, ketchup, chili garlic sauce, brown sugar, vinegar, sesame oil and 1 teaspoon cornstarch. Cover and shake well to combine ingredients.
  3. Whisk the flour, cornstarch and baking powder together in a small bowl. Combine with the marinated meat and toss to coat all of the pieces in the mixture.
  4. Pour oil to a depth of 1 inch in a saucepan or skillet and heat until a drop of water in the oil pops (about 375 degrees). Carefully add the coated pieces of meat and deep fry, turning once or twice, until golden brown, about 2 minutes. Remove to a rack to drain.
  5. Carefully pour the oil into a heat safe container to discard it, but do not wipe the pan out. Shake the sauce ingredients once more then add them to the pan and cook until the sauce is heated through and thickens slightly. Add the cooked meat and steamed broccoli to the sauce in the pan and toss to coat. Serve on a bed of white rice and garnish with sesame seeds.
Notes
If you have leftover rare steak you can use it up in this recipe, but you can also start with raw beef - sirloin is a good option, although most tender cuts of beef will work.
