Chocolate Chocolate Chip Cookies

Ingredients
  • 2 sticks salted butter
  • 1 cup brown sugar
  • ½ cup white sugar
  • ½ cup cocoa powder
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1-2 cups chocolate chips
Instructions
  1. Cream butter and sugars together until smooth. Add cocoa powder and eggs and mix on low until combined. Add vanilla extract, flours, baking soda, and salt and mix on low until smooth. Mix in chocolate chips.
  2. Scrape dough down from the sides and cover with plastic wrap directly on top of the dough. Refrigerate until chilled, then scoop onto baking sheets lined with parchment paper or silicone baking mats. Bake at 375 degreees for 13-15 minutes. Let cook on pan before removing.
Notes
I used Fibrelle artificial sweetener with fiber added to it in place of the white sugar and it worked great. I do find that the Fibrelle tastes a bit saltier so you may want to reduce or eliminate the salt if you use it.
